Tasty Sandwiches

Some good sounding nyc sandwiches here, although I can do without the fancy ones (no foie gras in my sandwich, please)…   It’s 2AM and now I’m very hungry;  and a bit jealous of New York where you can specialize in “big flat Italian falaffel balls”  [#9]…   I don’t think I can specialize in panelles here in the Upper Valley, but I can add them to menu – and I think I will.

Great trip to New York to meet with some couples (nice to meet you all) and do some eating.   I tend to eat pretty good, simple foods.   This trip I made it back to Porchetta on East 7 – so basic and done so well.   They do little more than Porchetta – slow cooked, highly seasoned, juicy pork with crispy skin.  I don’t eat too much meat but when i do this it what I like – well sourced, lovingly cooked, simple and delicious with perfect accompaniments.

Good Food in Woodstock!

I ate at Pane e Salute in Woodstock the other night. What a treat! Had heard great things about it but you never know until you see for your self. I loved it…   the dining room is small, beautiful and comfortable; the service is great and the food was delicious. And the pizza… finally some good, authentic pizza, which, along with a nice wine or glass a beer and a fresh salad is all I really need. I am looking forward to heading back and camping out at the bar.

Try this Sandwich

This sandwich sounds incredible and will be a happy addition to the Delicata selection -  I love how it’s all self-contained and obviously delicious.  Juicy grilled steaks layered with sauteed mushroom and all layered inside a hollowed out round loaf, then wrapped and pressed for six hours while all the flavors mingle and soak in.   Called the “Shooter’s Sandwich” this is British version of something I’ve heard of enjoyed in Italy, as well – there I believe it’s made with salumi and provolone.   I’d like one with Grilled Steak, Caramelized Onions, Sauteed Peppers, Pesto and Provolone.

7. Dollop in your hot mushroom mixture and tuck your second steak over the top. At this stage I usually smear hot horseradish on the top steak and Dijon mustard on the inside of the lid before fitting it back on to the loaf.
8. Wrap the whole thing in greaseproof paper and tie with butcher’s string, then wrap in two layers of foil and smush flat under a heavy cutting board and as many weights as you can find. Leave under the weights in a reasonably cool place (don’t refrigerate) for at least six hours or preferably overnight. Remove the foil and cut through string, paper and sandwich.

Vermont Junior Iron Chef

The Vermont Junior Iron Chef Competition is coming up again….   Saturday March 26 at the Champlain Expo in Essex, Vermont.   It’s going to be another fun day with even more teams impressing with their culinary skills.   I’m working with two super teams from Sharon Elementary who are really excited to show what they can do.    If you’re in the area on the 26th come by and cheer on the kids.
